One of our favorite desserts is Hawaiian Rainbow Bees’ Macadamia Nut Baklava, a delightful fusion of classic Middle Eastern baklava and our macadamia honey. This recipe has the delicate, flaky layers of filo pastry and the rich, crunchy goodness of macadamia nuts. Sweetened with our exclusive macadamia nut honey and a hint of lime, this baklava offers an exciting twist to the traditional dessert, resulting in an irresistible treat that marries sweet, tangy, and nutty flavors to perfection.

Ingredients:

  • Finely pared zest and juice of 1 lime
  • 1/3 c sugar
  • 1/8 cup + 1 tbsp Hawaiian Rainbow Bees Macadamia Honey
  • 2/3 c water
  • 2 1/2 c macadamia nuts, chopped, plus extra to garnish
  • 1 tbsp sesame seeds, toasted 3 tsp ground cinnamon
  • ½ c unsalted butter, melted
  • 9 sheets filo pastry
  • Powdered sugar to dust

Directions:

Preheat your oven to 350°F.

To make your syrup, place the Hawaiian honey, lemon zest, juice, and sugar in a saucepan on medium heat with 3/4 cup of water, keep stirring until all the sugar dissolves. Simmer for about 5-6 minutes or until it's thick enough to coat the back of your spoon. Set it aside to cool.

Place macadamia nuts, cinnamon, and sesame seeds in a food processor and pulse it all until its finely ground. Add 1/4 cup syrup and blend until the mixture binds together.

Place 1 sheet of filo on a work surface and brush with butter. Brush 2 more sheets and stack each one on top of the other, creating a filo stack. Repeat for a total of 3 stacks.

Place the first stack in the bottom of a lightly buttered baking dish. Spoon half of the nut mixture over the first layer of the pastry, spreading into a thin layer. Place another filo stack over the nut mixture.

Spoon the other half of the nut mixture onto the pastry, again spreading into a thin layer. Cover it with the third layer of filo stack and brush with more melted butter.

Bake for 20-25 minutes until crisp and golden. Remove from the oven, cut into squares, and pour over the remaining syrup while still hot.

To serve, trim any uneven ends, scatter with finely chopped, lightly toasted macadamia nuts, and dust with powdered sugar. Sprinkle with additional lime zest if desired.
